Video: Hungarian Recipe Of The Week – Gundel Pancake
The richly-filled Gundel Pancake and the dried fruits soaked in Tokaji Aszú provide a combination that will enchant your table.

Ingredients:

For the dough:

  • 500 g flour

  • 1-2 eggs

  • 2 tablespoons of sugar

  • water or soda

  • milk

For the filling: 

  • 250 g ground walnuts

  • 3 dl of cream

  • 2 tablespoons of sugar

  • lemon zest

  • orange zest

For the compote:

  • seeds and dried fruits mix

  • 1 tablespoon of sugar

  • 3 dl Tokaji Aszú

For the chocolate sauce:

  • 5 tablespoons of powder

  • 1 tablespoon of melted butter

  • 1 dl of cream

  • 1-2 tablespoons of sugar


Instructions: 

1. The first step is to prepare the compote. Put the ingredients into a buckle bottle, pour the Tokaji on it, then let it like that until we plate the pancakes.

2. The next step is the dough. Whisk a thin dough from the ingredients – more like a batter. When done, allow it to rest for 15 minutes, until the flour is completely hydrated.

3. The filling: heat the cream on medium heat and melt the sugar in it.

4. Once it has melted, add the ground walnuts. You can season it with lemon and orange zest. Cook until it thickens.

5. Fry the pancakes in a lightly oiled pan.

6. Mix the elements of the chocolate sauce in a bowl over a dish containing steaming water (bain-marie).

7. Richly fill the pancakes with the walnut filling, pour the chocolate cream over it, then add the compote on the top.
