Hungarian Recipe Of The Week: 'Sweet Elderflower Pie'
You may love or hate the scent of these creamy-white, fragrant blossoms, but you’ll have to admit that the sweet recipe that follows has summer written all over it.

Ingredients:
1 liter milk
250 g flour
100 g sugar
10 g vanilla sugar
1 teaspoon salt
3 eggs
50 ml elder flower syrup
10-15 elder blossoms
butter or margarine to grease baking pan
breadcrumbs

For decoration:
confectioner sugar or elder berry jam

Preparation time: 15 minutes + 60 minutes baking time

Preparation:

Wash the flowers or blossoms of the elder tree (Sambucus nigra), and strip them from the stalks. Heat oven to 280 °C.

In a large bowl, mix flour, elder berry syrup, salt, sugar and vanilla sugar. In a small bowl combine well beaten eggs and milk.

Add egg and milk gradually to flour mixture, beating to a smooth pancake-like batter, just a bit thicker. Add the blossoms to the dough.

Coat the bottom of the baking pan with margarine or butter, sprinkle with breadcrumbs and pour the dough into it.

Bake for 1 hour, until a toothpick inserted in the center comes out clean. When the pie is done, cool for a few minutes, then cut into 8-10 bars.

Sprinkle with confectioner sugar or add a spoonful of elder berry jam or elderflower syrup on top.

Hint:

* Use hand mixer to get a smooth batter.
* Do not add baking powder or baking soda!
* Do not make a thick pie, because the dough will remain raw inside.
* Instead of elderflower syrup, add more blossoms to create a more provocative flavor.
