While working on a project at the University of Helsinki, things did not turn out as he had planned, so he was forced to change careers, and drawing on his long‑standing interest in gastronomy he began making sausages again; the memory of the sausage‑making parties at the university gave him the idea for taking sausage‑making more “seriously.”
He first started stuffing sausages at home, then opened a pop‑up home restaurant where, among other dishes, guests could also taste his sausages, and they were such a success that a serious, paying customer base began to take shape.
At that point he looked for a business partner, and together they opened a place in downtown Helsinki that very quickly became a cult “hipster” spot: it offered unusually seasoned, out‑of‑the‑ordinary yet tradition‑respecting pre‑packaged grill sausages, craft beers, and art on the walls, since the venue also functioned as a gallery.
With his sausages he won the “Best Sausage in Finland” award in 2023, which strengthened the position of his already successful business. Later, for personal reasons, he moved back to Hungary and continued – or rather restarted – his work here: his workshop is now in Cukor Street in the 5th district, where the sausages are made, online orders can be picked up, and which also serves as an event space hosting workshops and tastings.
On Saturdays he can also be found at the Fény Street Market where he shares a spot with Sándor “Sanya” Nagy of “A Bufe” who also makes British style sausages.

1. Where did you grow up?
Székesfehérvár, Hungary - once capital of Hungary, now a beautiful, proud yet fairly uneventful and dull town 60km from Budapest.
2. If you could be an expat anywhere in the world, where would you choose?
I have already been an expat, as I've spent 14 years in Helsinki, Finland. That was a life transforming experience. I'd probably try some sunnier place with colourful birds and palm trees. :)
3. What would you miss most if you moved away from Hungary?
Family, friends, the language, the unique culture and cultural references we all know but remains hidden to most non-Hungarians.
4. Friends are in Budapest for a weekend - what must they absolutely see and do?
Spa at Lukács or Veli-bej, a brunch and walk in the Jewish quarters, a beer at Bem mozi or Fény utca, a day time rave on KASSA boat or a concert at Dürer, a jog in Margitsziget.
5. What is your favourite food?
I can be too excited about tojásos nokedli, I love a good bread with good butter and sea salt, and all food that's made with care and passion.
6. What is your favourite sport / form of exercise?
I used to be a Videoton fan (Hungarian football), but long gone the years of my Red-Blue Devis years... I've ran several half marathons, but had to stop due to a knee injury. I have a newfound passion for kayaking.
7. What is your favourite place in Hungary?
My father's home village Balatonberény + Dunakanyar / Nagymaros
8. What career other than yours would you love to pursue?
Archeologist / Historian
9. What’s a job you would definitely never want?
Politician
10. Where did you spend your last vacation?
I took my daughter (16) on a road trip in Croatia - Northern Italy, then I lead a 1 week kayak trip to Finland for 6 persons.
11. Where do you hope to spend your next one?
Would be nice to visit Italy again, preferably Sicily or Calabria.
12. What was your favourite band, film, or hobby as a teen?
Depeche Mode + Beastie Boys, The Mask by Jim Carrey and roller skating / street hockey.
13. Apart of temptation what can't you resist?
:D well... when someone says "We should cooperate, let's do this!"

17. Which social issue do you feel most strongly about?
Child welfare issues, societal inequity, immigration.

Buda
19. Which achievement in your life are you most pleased about?
PhD in the most insignificant of soil animals (Isopods), successful sausage company with no background, history project and book with no background.
20. What would you say is your personal motto?
Everything has an end, but a sausage has two.
