Recipe Of The Week: 'Thick Gooseberry Soup'
A savory recipe for gooseberries – an excellent summer dish.

 Ingredients for about 4 servings:
500 g gooseberries
1 l water
salt
1 cup cream or sour cream
3 Tbsp flour
300 g sugar

Preparation time: 20 min.

Preparation:

Remove stems and blossom ends from gooseberries, and then wash them. Put into a saucepan with 1 l water, and cook until boiling.

In a separate bowl, mix flour and cream or sour cream, stir until smooth. Add cold water to make it runny enough to pour into hot gooseberry soup. Stir well, and simmer for 5 or 10 minutes, until it thickens. When done, remove from heat and add sugar.

Serve as a one-dish meal or paired with boiled meat or meat patties.

Hint:

Avoid using wrinkled or yellowing berries.
If it is very thin, mix 1-2 Tbsp starch with a small amount of water, and fold into the soup. Do not boil any longer.
You can add more or less sugar, according to your own palate.
