Chef's Exit Serves Up New Format at Only 2 Star Restaurant in Rural Hungary
Top Chef István Pesti will leave Platán Gourmet in Tata on July 31, bringing to a close a remarkable chapter in the story of Hungary's only two Michelin starred restaurant outside Budapest.

Under Pesti's leadership, Platán Gourmet rose to become one of Hungary's most celebrated dining destinations, earning a second Michelin star in 2023. 

This achievement placed it alongside Stand in Budapest as one of only two restaurants in Hungary to hold the prestigious Michelin two star distinction.

From August, the restaurant will adopt a new format centred on guest chefs, winemakers and special gastronomic events.

Pesti recently went on the record to say the decision came after a lengthy period of consideration and reflection.

The change applies only to Platán Gourmet. Other businesses within the Platán complex, including Platán Bistro and Platán Udvarház, will continue operating as normal.

His departure follows a significant ownership change in 2025, when the local gastro giant Costes Group acquired a majority stake in the restaurant. 

Costes founder Károly Gerendai frankly told XpatLoop.com that operating a two Michelin star restaurant in a provincial town has proven financially challenging.

While Platán Gourmet has attracted strong interest from local diners, Gerendai said it has struggled to draw the volume of international guests needed to support a fine dining establishment at this high level in the Hungarian countryside.

Despite the change, Platán Gourmet remains one of Hungary's most acclaimed restaurants and its next chapter will be watched with great interest by the international community.
