A Cocktail Telling a Hungarian Story to the World at The Duchess Rooftop Bar
The signature cocktail of The Duchess Rooftop Bar, located at the top of Matild Palace, the Golden Peacock, has gained international recognition following the Michelin ceremony in Dublin.

What makes the drink truly distinctive is the way it introduces one of the most iconic elements of Hungarian wine culture, Tokaji Aszú, into the world of modern mixology, presenting local heritage through a concept that speaks an international language.

The cocktail combines the character of Pisco Capel Reservado with the richness of Sauska 5 Puttonyos Tokaji Aszú, while quince, linden honey, and fresh lime create a refined balance within the flavor structure.

The base of the drink is a clarified mixture prepared using the milk-washing technique, resulting in a crystal-clear appearance and a silky texture.

The story of the Golden Peacock aligns closely with current directions in the international bar scene, where increasing emphasis is placed on identity, narrative, and carefully structured flavor harmony.

“Today, the international bar industry primarily looks for character and concept in a signature cocktail. The more closely a drink’s flavor profile and visual presentation connect to the concept behind it, the more valuable it becomes. At the same time, the use of sustainable garnishes and local ingredients remains highly sought after.”- explains Balázs Nagy, Assistant Bar Manager at The Duchess and the creator of the cocktail.

According to Balázs, the international attention the drink has received is particularly significant, as it demonstrates that concepts inspired by Hungarian heritage can resonate within the global gastronomic landscape.

“For me, the fact that a cocktail I created attracted attention within the Michelin environment is a tremendous honor and a very meaningful form of recognition. The Michelin name represents quality worldwide, so it means a great deal that one of our cocktails has been acknowledged in this context,”- he adds.

At the heart of the Golden Peacock lies Tokaji Aszú, which takes on an entirely new role in this cocktail. Rather than contributing a dessert-like sweetness, the Aszú brings depth and complexity to the structure of the drink, while its natural balance of acidity and sugar subtly harmonizes the flavors.

“Today it’s no longer about trends, but about genuine substance. A cocktail becomes globally understandable when it tells a local story in a language that can be interpreted anywhere in the world,” the bartender notes.

The character of the cocktail was inspired by the elegance of Matild Palace and the iconic golden peacock motif of The Duchess bar. The name itself refers to this symbol: the peacock represents refined, confident elegance, precisely the character the cocktail embodies.

The story of the Golden Peacock demonstrates how the heritage of a historic wine region can meet contemporary cocktail culture. The ambition of Matild Palace is to present Hungarian gastronomic values from a fresh perspective to international guests, even through a single cocktail.
